Spiked Peach Popsicles

It’s mid August. Can you believe it? The kids are getting ready to return to school, or already have if you live in the south, and summer is starting to wind down. I still have summer on my mind though if I am being honest. I have tons of fresh peaches left and I wanted to get the most out of them!

It’s still hot in Michigan, so I decided what better way to beat the heat than to make a yummy peach popsicle! Then I had an even better idea and thought to myself, “Maybe I should spike it?”, well I did and it turned out great.

This was so simple to make! It’s so refreshing, and let’s be honest, we need a little refreshing after this year am I right?

The popsicles start off with a yummy peach hard seltzer, mixed with fresh peach puree, and a scoop of fresh peach compote.

The hardest part of this recipe is being patient enough to wait while they freeze. If you want to make a non alcoholic version, just swap out the seltzer for flavored water or lemon lime soda.

Spiked Peach Popsicles

Fresh peaches, spiked peach seltzer and yummy peach compote, frozen into a delicious cool treat.

Ingredients

Instructions

  1. Cook down diced peaches, over medium low heat, until soft, about 20 minutes. Set aside to cool.
  2. Using a fine mesh strainer, strain out peach puree into a small bowl. You will need to mash the peach compote with a rubber spatula for best results.
  3. Mix 2 tablespoons of peach puree, per 8oz of seltzer, in a glass, Pyrex, liquid measuring cup.
  4. In the bottom of a popsicle mold (linked below), add 1 tablespoon of peach compote, pour liquid mixture over top and allow to set for at least 4 hours, best if left overnight.
  5. To remove from mold, run the bottom of the mold under lukewarm water for 30 seconds, lightly pull the popsicles out, and enjoy!
