

I love grilling. That’s a known fact in our household. I love the mess being outside all summer long, and I love being able to breathe the fresh air while I cook. I decided I wanted to make a yummy grilled version of one of my favorite Italian dishes, caprese salad.
Obviously I was not about to grill a salad, but I decided to grill some chicken, tomato and top it off with some delicious balsamic glaze, fresh mozz, and fresh basil from my garden. I paired it with a side of farfalle tossed in marinara.
It was so easy to make and was a real hit with my husband. I hope you give this a try and if you do, let me know what you think!

Caprese Chicken
Description
Grilled chicken, topped with fresh mozzarella, fresh basil, balsamic glaze and grilled tomato.
Ingredients
Farfalle and Marinara
Instructions
- Brush grill with olive oil to prevent sticking
- Preheat grill over medium heat
- In a small bowl mix together garlic salt, onion powder and Italian seasoning, sprinkle over chicken breasts
- Grill chicken over medium low heat, flipping every so often, until internal temp is 155 degrees
- Once chicken is at 155 add fresh mozzarella to chicken and cook until it reaches 165 degrees internally
- While chicken continues cooking, , add tomato to the grill, I put down foil and add oil to it to prevent sticking.
- Once tomato is cooked, remove from grill along with chicken.
- Add tomato to top of chicken, drizzle with balsamic glaze, and sprinkle over chopped basil.
- Cook pasta to box instructions
- Toss with marinara and heat thoroughly. Serve on side of chicken.
