Watermelon is the quint essential summer fruit, and it pairs even better with mint. I decided that I wanted to give a go at freezing watermelon. I was surprised at how amazing this drink was. It happened by pure experimentation, and I am so happy I tried it. It is cool and refreshing, which makes it the perfect drink for these hot summer days.

Fizzy Watermelon Slush
Description
Frozen watermelon, meets mint simple syrup. Topped off with hard sparkling lime seltzer.
Ingredients
Mint Simple Syrup
Instructions
- Put watermelon, simple syrup and hard seltzer (or Sprite) into a blender. On medium high speed blend until smooth.
- Enjoy!
- Over medium heat, in a nonstick pot, add sugar and water.
- Stir frequently until sugar is completely dissolved and no longer gritty. About 10 minutes.
- Remove from heat, and add mint leaves, stir, allow to steep and cool, about 10 minutes.
- Strain mixture and store in an air tight container for up to 2 weeks in the fridge.
