Peaches and Cream Smoothie

I’m stuck somewhere between my heart being in fall, but my body being stuck in Michigan’s heat advisory last stance summer. So to cool off from the heat, what better way than to enjoy a nice summer peach smoothie.

I call this peaches and cream because I add my secret weapon, coconut cream, to the smoothie which adds to the overall, velvety texture.

Another secret ingredient is xanthan gum. I know you must be wondering what this is and where to find it, but it’s rather easy to find. Let me tell you how I use it and why. Xanthan gum is a commonly used stabilizer and thickener in our foods. I get mine from Target, from a brand called Bob’s Red Mill.

The reason I add this to my shake is to add some thickness. Xanthan gum is a great way to thicken shakes, and a little goes a long way. It’s perfect for smoothie bowls as well. It’s gluten free and also wonderful for baking.
